Until recently, sake has had a strong image of being “a beverage only for certain people,” but due to the influence of the Japanese food boom, easy-to-drink sake like ginjo is being enjoyed by a wide-range of enthusiasts. Made only from rice, water and malt by traditional methods, sake is an aspect of Japanese food culture that the Japanese people have taken great pride in for more than 2,000 years. Right now, new types of sake such as low alcohol and sparkling sakes are also entering the market. In the long history of sake, we can say that the period in which we can enjoy a rich variety of different kinds of sake has finally arrived.
It goes without saying that sake and Japanese food go well together, but sake is also quite compatible with Western food. In either case, the current feeling is to try some kind of sake without getting into the technical side of things. The number of restaurants serving delicious sake is now increasing.
