Matcha Rolls


Ingredients

2/3 cup milk
1 oz butter
1 oz sugar
1/4 dry yeast
7 oz bread flour (high-gluten)
1 tsp salt
1 1/3 tsp matcha, or 3 tsp MT
2 Tbsp sesame seeds
1 Tbsp tea leaves for topping
8 small sausages, optional


Method

1. Warm the milk, add the butter, and until it melts. Add the sugar and let the mixture cool down body temperature.
2. Add the dry yeast and stir. Leave for about 5 minutes until it begins to bubble.
3. Combine the flour, salt, and matcha, and sift into a mixing bowl. Slowly pour in the milk and yeast mixture and knead into a dough.
4. Cover the dough with a kitchen cloth and leave to rise in a warm place for about 40 minutes.
5. When the dough triples in size, divide it into 8 portions and leave to rise for another 30 minutes again.
6. Preheat the oven to 360 F
7. Shape the dough into round balls. Place on a baking sheet and leave for 20 minutes to rise for the third time. (Roll out the dough into stick shapes, if you prefer.)
8. Using your fingertips, wet the top of the dough with a little water, and sprinkle with sesame seeds and tea leaves, or any dried herbs. Bake for 12 – 15 minutes. (If you are making bread sticks, one alternative is to place a sausage inside the stick of dough and bake.)
