Deep-Fried Tofu with amber sauce
Ingredients
- 1 cake tofu
- Grated daikon radish
- Grated fresh ginger
- Scallions, cut into thin round slices
- 1/6 cup flour
- 1/6 cup cornstarch
- Oil for deep-frying
Amber sauce
- 1/2 cup dashi stock
- 1 Tbsp mirin (sweet rice wine)
- 1/2 Tbsp soy sauce
- 1/5 tsp salt
Method
- Wrap the tofu in a cloth. Press lightly on top to remove excess water. Cut it in half.
- Mix the flour and cornstarch. Coat the tofu with the mixture. Let it stand for 5 minutes and then coat it again.
- Deep-fry in oil preheated to 360 F until golden brown.
- Combine the amber sauce ingredients and bring them to a boil. When the sauce has boiled, turn off the heat.
- Transfer the hot tofu to a small bowl. Top with grated radish, grated ginger and green onions. Fill the bowl with the hot amber sauce.
