Deep-Fried Tofu with amber sauce

Ingredients

  1. 1 cake tofu
  2. Grated daikon radish
  3. Grated fresh ginger
  4. Scallions, cut into thin round slices
  5. 1/6 cup flour
  6. 1/6 cup cornstarch
  7. Oil for deep-frying

Amber sauce

  1. 1/2 cup dashi stock
  2. 1 Tbsp mirin (sweet rice wine)
  3. 1/2 Tbsp soy sauce
  4. 1/5 tsp salt

Method

  1. Wrap the tofu in a cloth. Press lightly on top to remove excess water. Cut it in half.
  2. Mix the flour and cornstarch. Coat the tofu with the mixture. Let it stand for 5 minutes and then coat it again.
  3. Deep-fry in oil preheated to 360 F until golden brown.
  4. Combine the amber sauce ingredients and bring them to a boil. When the sauce has boiled, turn off the heat.
  5. Transfer the hot tofu to a small bowl. Top with grated radish, grated ginger and green onions. Fill the bowl with the hot amber sauce.
