Soymilk Pudding
Ingredients
This homemade custard has a natural sweetness
(for 3-4 puddings)
1 1/3 cups soymilk
1 3/4oz sugar
2 Tbsp water
1 tsp water
1 2/5oz honey
1 Tbsp rum
Dash of vanilla extract
Method
- Heat the sugar and 2 tablespoons of water in a small pot over low heat. When the mixture turns brown, add 1 teaspoon of water to make caramel sauce.
- Butter pudding moulds, and pour equal portions of the caramel sauce into each one.
- Heat the soymilk in a pot and mix in the honey. Let it cool.
- Beat the eggs, add the soymilk mixture, and strain. Mix in the rum and vanilla extract.
- Pour the mixture into the molds until each in 80% full.
- Cover a baking tray with hot water, and place the molds in them. Bake them in an oven preheated to 360 F for 20 to 25 minutes. Insert a skewer to test for doneness. Let them cool slightly and then chill them in the refrigerator.
