Soymilk Pudding

Ingredients
This homemade custard has a natural sweetness
(for 3-4 puddings)

1 1/3 cups soymilk
1 3/4oz sugar
2 Tbsp water
1 tsp water
1 2/5oz honey
1 Tbsp rum
Dash of vanilla extract

Method

  1. Heat the sugar and 2 tablespoons of water in a small pot over low heat. When the mixture turns brown, add 1 teaspoon of water to make caramel sauce.
  2. Butter pudding moulds, and pour equal portions of the caramel sauce into each one.
  3. Heat the soymilk in a pot and mix in the honey. Let it cool.
  4. Beat the eggs, add the soymilk mixture, and strain. Mix in the rum and vanilla extract.
  5. Pour the mixture into the molds until each in 80% full.
  6. Cover a baking tray with hot water, and place the molds in them. Bake them in an oven preheated to 360 F for 20 to 25 minutes. Insert a skewer to test for doneness. Let them cool slightly and then chill them in the refrigerator.
