Eel and Tofu
Ingredients
1 cake momen tofu
1 skewer of broiled eel
Broth
1 1 1/2 cup dashi stock
1 Tbsp mirin
1/5 tsp salt
1 tsp cornstarch
3 1/2 oz potherb mustard
Powdered pepper
Method
- Cut the tofu into 8 cubes. Cut the broiled ell into bite-sized pieces. Cut the potherb mustard into 2 in lengths.
- Boil the broth ingredients in a pot. When it comes to a boil, add the tofu and eel and cook for 5 minutes.
- Add the potherb mustard to the broth and boil briefly.
- Transfer the mixture to a bowl and sprinkle with powdered pepper, if desired.
