Tofu & Cheese
- 1 pkg. (19oz.) package of House
Chef Tofu, Original
- 16 slices buttered whole wheat bread
- 1 lb. cheddar cheese, thinly sliced
- 2 medium-size ripe tomatoes, thinly
sliced

DRAIN out excess moisture from tofu, and
cut each cube of tofu vertically into twelve 3x1x1/4-inch slices. For
each sandwich, place 1 slice bread, buttered side down, in a non-stick
skillet over medium heat. Layer 1 ounce cheese, 1 layer (about 6 slices)
tofu, 1 layer tomato, 1 ounce cheese and another slice of bread, butter
side up.
GRILL until bottom layer of cheese begins to melt; flip sandwich
carefully with spatula. Continue to grill until cheese is melted and
bubbly. Repeat with remaining ingredients. Serve immediately.
