Linguine
Al Pesto*

This
thoroughly delicious pesto is made in the food processor or blender in
just minutes without all the fat and calories of traditional pesto.
INGREDIENTS:
- 1/3
C pine nuts, toasted
- 1
large bunch fresh basil leaves
- 4
cloves garlic, peeled
- 3/4
C Mori-Nu Creamy Garden Pea Soup
- 1/2
C soy Parmesan cheese
- 2
Tbsp nutritional yeast
- 1/8
tsp coarse black pepper
- 1/4
tsp sea salt
- 1
(16 oz.) package linguine
DIRECTIONS:
- Toast
pine nuts in a small, dry frying pan.
- Place
the basil and garlic In food processor and process to chop coarsely.
- Add
pine nuts and Creamy Garden Pea Soup, then process.
- Add
the soy Parmesan, nutritional yeast, black pepper, and salt.
- Process
until well mixed and set aside.
- Cook
pasta according to package directions, drain, and toss with pesto.
- Serve
immediately
