Linguine Al Pesto*

This thoroughly delicious pesto is made in the food processor or blender in just minutes without all the fat and calories of traditional pesto.

INGREDIENTS:

  • 1/3 C pine nuts, toasted
  • 1 large bunch fresh basil leaves
  • 4 cloves garlic, peeled
  • 3/4 C Mori-Nu Creamy Garden Pea Soup
  • 1/2 C soy Parmesan cheese
  • 2 Tbsp nutritional yeast
  • 1/8 tsp coarse black pepper
  • 1/4 tsp sea salt
  • 1 (16 oz.) package linguine

DIRECTIONS:

  1. Toast pine nuts in a small, dry frying pan.
  2. Place the basil and garlic In food processor and process to chop coarsely.
  3. Add pine nuts and Creamy Garden Pea Soup, then process.
  4. Add the soy Parmesan, nutritional yeast, black pepper, and salt.
  5. Process until well mixed and set aside.
  6. Cook pasta according to package directions, drain, and toss with pesto.
  7. Serve immediately
