Potato Croquettes

These nutritious potato croquettes fit
perfectly in a grand party menu.
Ingredients:
- 1 3/4 - 2 1/4 lb (800-1,000 g) potatoes
- 1 onion, finely chopped
- 9 oz (250g) lean ground beef

- 1 t salt
- Dash of pepper
- 1 T oil
- 2 T green peas, cooked
- All-purpose flour for dusting, approx.

- 2 eggs
- 1 1/2 - 2 C bread crumbs
- Oil for deep-frying
- Condiments
- Ketchup
- Worcestershire sauce
** Canned tuna or salmon can be also used.
Procedure:
- Heat 1 T oil; add chopped onion and sauté until
transparent.
- Add ground beef and cook until done,
sprinkling on 1 t salt and a dash of pepper.
- Set aside to cool.
- Peel potatoes and cut into chunks.
- Boil potatoes in water until done and
test with bamboo skewer.
- In a bowl, add potatoes and 1 t salt.
Mix and mash.
- Add cooked green peas.
- Mix cooled meat and potatoes.
- Cost the patties with flour, beaten eggs
and bread crumbs as shown.
- Deep-fry in 340-360˚F (170-180˚C) oil
until golden brown.
