Francisco Scramble
- 1 pkg. (14oz) Hinoichi
Tofu Firm or House Organic
Tofu Firm, drained
- Egg substitute equivalent to 4 eggs or
4 large eggs
- 1/2 t salt or to taste
- 1/4 t pepper or to taste
- 1 t cider or rice vinegar
- 1 c diced extra-lean or fat-free ham
(4-5oz.)
- 1/3 c diced green bell pepper
- 1/3 c chopped green onion
- 1/2 c tomato (1 med.), diced
- 2/3 c shredded fat-free sharp cheddar
cheese, divided

Place tofu, eggs, salt, pepper &
vinegar into food processor bowl or blender; process for 1 min. until
well blended -- Pulse in ham, bell pepper & onion -- Add tomato
& 1/3 c cheese -- Spray frying pan with non-stick cooking spray,
pour into pan -- Scramble over med. heat until mixture is firm --
Sprinkle with remaining cheese, cover & heat until cheese melts
Serving Suggestion: Serve on top of
split English muffins
