Tortilla Roll-ups
- 1 (14 oz) pkg. Hinoichi
Regular Tofu, drained
- 1 (1.25 oz.) pkg. taco seasoning mix
- 1 cup thawed frozen corn, or 1 (8 oz.)
can whole kernel corn
- 1 (15 oz.) can (1 1/2 cups) black
beans rinsed and drained
- 1 cup (4 oz.) fat-free or lowfat
shredded cheddar cheese
- 6 fat-free or lowfat 9 1/2" flour

Blend tofu & seasoning mix together
in a food processor or blender until smooth, 1-2 mins. -- Spread 1/3 cup
tofu mixture, 2 Tbsp. corn, 1/4 cup black beans & 2 Tbsp. shredded
cheese on each tortilla to within 1/2" of edge. -- Tightly roll
tortillas & wrap each in a paper towel. -- Microwave wrapped
tortillas on high for 1-2 mins. each.
Serving Suggestion: For zestier flavor;
serve with prepared salsa.
Note: Can be prepared ahead and heated before serving.
