Rice with Tofu
- 1 (14 oz) pkg. Hinoichi
Firm Tofu, drained & cut into 1/3" cubes
- 1 1/2 Tbsp. minced raw garlic
- 1 1/2 tsp. chili powder
- 1 (14.5 oz.) can diced Italian-style
tomatoes, undrained
- 1 cup water
- 1 (6 oz.) pkg. Spanish Style Rice Mix

Lightly coat 4-qt. pan with non-stick
cooking spray. -- Add all ingredients including rice seasoning packet.
-- Heat to boiling, stirring occasionally. -- Reduce heat, cover and
simmer 20 minutes, stirring occasionally.
Serving Suggestion: Sprinkle with
3/4 cup shredded cheddar cheese.
